In Awadh, royal chefs created a unique dessert called Benami Kheer. Garlic was boiled multiple times (traditionally with agents like alum) to remove its strong smell, transforming it into a soft, neutral base that tasted similar to almonds.
The name Benami means “without identity” — because people eating it couldn’t even guess it was made from garlic!
This is one of the most surprising examples of Mughlai food innovation and culinary science.
