The Princess of Wales took on the role of a ‘Rezdora’ on Thursday, the local name for a matriarch or housewife who specialises in rolling fresh pasta by hand.
Visiting the Agriturismo Al Vigneto, a farm-stay tucked away in the hills outside Reggio Emilia, Catherine joined veteran chef Ivan Lampredi to try her hand at crafting traditional tortelli.
“When I do this at home it’s without a big bowl and it goes everywhere. It’s a good work out,” she joked as she kneaded the flour and water to make the dough.
In a lighthearted moment, the handle of the pasta machine fell off while she was rolling the sheets. “Is there a technique for this?” she laughed, quickly recovering with the help of Signor Lampredi.
Signor Lampredi, 49, who has been a chef for 30 years, told her: “You are hired.” He said later: “I have shown many people how to do this exactly right and she was very good at it. She is a natural Rezdora.
“She learnt it very quickly. She was a very easy person to speak to, someone just like us. It has been a huge honour for me to host the princess in my kitchen. I can’t believe it. It’s been a big responsibility.”
