Meramec. McCormac\u2019s background is in the music industry, having promoted roughly 1,300 concerts in St. Louis and nationally, while Longueville owns <a rel=\"nofollow\" target=\"_blank\" href=\"https:\/\/www.stlbarkeep.com\">STL Barkeep<\/a> and runs <a rel=\"nofollow\" target=\"_blank\" href=\"https:\/\/www.offelmstl.com\">Off Elm<\/a> in Webster Groves and <a rel=\"nofollow\" target=\"_blank\" href=\"https:\/\/www.thevandystl.com\">The Vandy<\/a> in The Grove. Nate Hereford, formerly the executive chef at Niche and currently the owner of <a rel=\"nofollow\" target=\"_blank\" href=\"https:\/\/chxscratchstl.com\">Chicken Scratch<\/a>, has been tapped to lead the culinary program. Operating Wednesday through Sunday, Mr. Meyer\u2019s plans to offer four seatings\u2014a no-cover happy hour from 4\u20136 p.m. followed by two-hour ticketed windows until closing time, which could be as late as 1 a.m. on weekends.<\/p>\n<p>\u201cThere\u2019s not going to be anything like this here in St. Louis,\u201d McCormac told city officials during Tuesday\u2019s meeting.<\/p>\n<p>If that seems like a departure from Clayton\u2019s typical nightlife offerings, that\u2019s largely the point.<\/p>\n<p>Beyond major events like the St. Louis Art Fair or Taste of St. Louis, downtown Clayton has long faced a familiar challenge: streets that show signs of life during the workday but are noticeably quieter in the evenings and on weekends. As the city updated its comprehensive plan in 2024, residents consistently said they wanted a more vibrant downtown.<\/p>\n<p>City leaders have been exploring ways to shift the dynamic. Recent additions like <a rel=\"nofollow\" target=\"_blank\" href=\"https:\/\/www.stlmag.com\/dining\/five-iron-golf-opening-in-clayton\/\">Five Iron Golf<\/a> and <a rel=\"nofollow\" target=\"_blank\" href=\"https:\/\/www.stlmag.com\/dining\/flight-club-to-open-in-former-cantina-laredo-clayton\/\">Flight Club<\/a> have begun to bring more energy to the area, offering new reasons for people to stay later into the evening. The Mr. Meyer\u2019s proposal would be a different kind of draw\u2014smaller, more intimate, and centered on music and elevated cocktails.<\/p>\n<p>\u201cIt seems like a great concept,\u201d Ward I councilmember Becky Patel said during the meeting. \u201cWe\u2019ve been trying to attract and create different opportunities for folks to enjoy the \u2018play\u2019 aspect of live, work, play in Clayton.\u201d<\/p>\n<p>At the same time, Tuesday\u2019s discussion made clear that even as Clayton looks to expand its after-hours options, there are practical questions to work through. The primary concern is noise. Because Mr. Meyer\u2019s would be located beneath Ivy Cafe and Avenue\u2014the space formerly housed Miso on Meramec\u2019s Underground Lounge\u2014council members sought assurance that music from the venue would not disturb the existing establishments. McCormac told city officials he\u2019s working with a consultant on a sound abatement plan that includes acoustic panels and specialized speakers to control the sound.<\/p>\n<p>\u201cWe are looking to bring a really fresh energy to Clayton,\u201d McCormac told city leaders. \u201cI think the time is right.
