Tim Paul and Kamelya Alexan

The ‘I’m Only Blind’ documentary tells the story of an inspirational marathon runner.

Tim Paul, a blind marathon runner, and Kamelya Alexan, the local filmmaker behind the inspiring documentary “I’m Only Blind” also joined “Windy City Weekend” Friday.

The film tells Paul’s story, as he defies expectations and becomes an accomplished athlete despite total blindness. Directed and produced by Alexan, the documentary continues to earn acclaim, including recognition at the Beverly Hills Film Festival.

Paul is set to run the Chicago Marathon this Sunday, followed by the Rise to Shine 10K/5K/1M with The Chicago Lighthouse on Sunday, Oct. 19. It’s a race that’s open and accessible to all levels and abilities.

There will be a special screening of “I’m Only Blind” at Classic Cinemas in Oak Park at 7 p.m. Monday, Oct. 27.

Tailgater Pasta Salad
Ingredients:
– 1 16 oz. package Alessi Organic Penne
– 1/4 cup Vigo Pepperoncini, chopped
– 1/4 cup Vigo Artichoke Hearts, chopped
-1/4 cup Alessi Roasted Red Pepper, sliced
– 1/4 cup Vigo Kalamata Olives (Sliced)
– 1/4 cup Heart of Palm (Salad Cut)
-1/4 pound sliced prosciutto, chopped
– 1/4 pound sliced salami, chopped
– 1/4 pound mozzarella, chopped
-1/4 pound provolone, chopped
– 8 tablespoons Alessi EVOO
– 4 tablespoons Alessi Balsamic Vinegar
– 1 clove fresh garlic, minced
– Alessi Sea Salt and Black Peppercorns, to taste
– Fesh Italian Parsley, to taste
– Fresh Basil, to taste

Instructions:
1. Bring 6 quarts of salted water to a boil. Add pasta and cook ‘al dente’ approximately 10-12 minutes. Drain immediately and place noodles in ice bath, drain again. Let cool pasta cool in a bowl.
2. In the same bowl combine penne, prosciutto, salami, mozzarella, provolone, pepperoncini, artichokes, peppers, olives, heart of palm, basil and parsley.
3. In a separate bowl whisk oil, vinegar, garlic, salt and pepper to combine. Pour over pasta salad. Toss well to evenly coat.
4. Serve immediately or chill for 1 – 2 hours.

The Bourbon Balsamic Mule
Tailgating is all about pre-gaming. So, here’s a fun take on an Old Fashioned and a Moscow Mule. Balsamic vinegar takes the place of lime juice, adding its own acidity and tartness.
Ingredients:
– 2.5 oz. of your favorite bourbon or rye whiskey
– 1/2 tablespoon of Alessi Balsamic Vinegar
– 12 oz. of Ginger Beer
– 2 sprigs of basil
– Ice cubes for shaking and serving

Instructions:
1. Place your ice in a cocktail shaker
2. Add whiskey
3. Add Balsamic Vinegar
4. Shake vigorously for about 20 seconds
5. Pour the mixture over a large ice cube in a rocks glass
6. Top with Ginger Beer and mix with a spoon
7. Garnish with basil leaves
